Alright y’all, who’s ready for the big game this weekend? Last year we threw a big shindig, but this year I think it’s just going to be a cozy night in. Even if it is, football is still the best reason for snacks and finger-food. Who else agrees?! To be honest, I stopped following along when both of our teams were knocked out. (Yes, Harrison and I route for different teams when it comes to most sports.) But, although I may be more aware of who is performing for the halftime show than I do the teams playing, you can still count me in for allll the snacks!

Beer Cheese & Homemade Pretzel Bites Recipe
 
Ingredients
  • 12 oz. sharp cheddar cheese, shredded
  • 1.5 tablespoons cornstarch
  • 1 12 oz. beer, preferably a brown ale or dark beer
  • 5 oz. evaporated milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 tube or container pre-made pizza dough
  • ⅓ cup baking soda
  • 1 egg beaten
Instructions
  1. Beer Cheese:
  2. Toss cheese with cornstarch in a medium bowl; set aside.
  3. Whisk together beer, milk, mustard, and Worcestershire sauce in a medium saucepan. Heat over medium heat until gently steaming, whisking frequently to prevent scorching.
  4. When beer mixture is warm, add cheese, stirring until completely melted, bubbling slightly, and thickened. Stir in hot sauce and season with salt to taste; serve immediately.
  5. Pretzel Bites:
  6. Start by preheating your oven to 425 degrees for the pretzel bites.
  7. Roll out pizza dough on top of a cutting board.
  8. Cut dough into 2" by 2" squares, roll up into balls.
  9. Boil 2 quarts of water in a deep pot or pan, add baking soda, stir.
  10. Add dough balls and cook for 2 minutes, or until they puff up.
  11. Remove dough balls with a slotted spoon, and place on cookie sheet covered in parchment paper.
  12. Brush a good amount of the egg on top of each dough ball, then sprinkle the whole cookie sheet with salt.
  13. Bake for 15 minutes or until golden brown.
  14. Allow to cool.
  15. Serve with your beer cheese & enjoy!

Other then these delicious pretzel bites, you could serve alongside some sliced bread or pita and fresh vegetables like bell peppers, carrots or celery.

Beer cheese is super easy to make at home, and as long as you’re a dark beer drinker, you’ll probably already have all of the ingredients on hand! We went with this Dogfish Head Pennsylvania Tuxedo, mainly because it’s a local beer for us. We prefer to drink local when possible!

Another added plus, this recipe is easy to make in a normal size or a big batch. Save this one for when you have a large group of friends come over for Happy Hour and you have no idea what to serve!
